✨🫐Blueberry Ice Cream Bars🫐✨ There’s no better way to beat the summer heat than with these Blueberry Ice Cream Bars🤤💙 They’re coated in a crunchy chocolate shell and filled with homemade blueberry compote, all wrapped in a rich, creamy ice cream that’s completely dairy-free🤍 ✨Ice Cream 3/4 cup (155g) coconut cream* 3/4 cup of cashews (100g)* 1/4 cup maple syrup 1 tsp vanilla extract or vanilla bean paste pinch of salt 🫐Note *Make sure to refrigerate the coconut cream overnight before using! I like pressing down the blueberries to give them a smoother texture and release more of the juice flavor. Add the cornstarch to the mixture and whisk it quickly, making sure to break up any clumps. Cook for another 1-2 minutes until the mixture thickens further, then remove from the heat and allow the mixture to *fully* cool. Take your ice cream molds and add your popsicle sticks inside. Add a few dollops of the ice cream, then use a spoon to bring the ice cream up to the sides. Add a generous dollop of blueberry filling, then add more ice cream, making sure to completely cover the blueberry mixture. Place the ice cream in the freezer for 4-6 hours or overnight, until the popsicles are fully frozen. Melt the vegan white chocolate and whisk it together with some coconut oil.
