Smoky turkey, collards, bok choy, baby kale, spinach, ginger, garlic, turmeric, and rich chicken bone broth simmered low and slow until the pot liquor turned silky and deeply savory. Add onion and shallot and cook until softened. Stir in garlic, ginger, and seasonings. Add collards and enough broth to fully cover greens. Bring to a boil, then simmer partially covered for 1½–2 hours, adding more broth as it reduces. Add bok choy and simmer 20–25 minutes more. Stir in baby kale and spinach and cook until silky.
