Some recipes do not double very well because it needs the surface area of the pan. I have another rice recipe that can’t be doubled because it gets too deep and it actually needs the surface area.

this is similar to how turkish aunties taught me to make pilav, but they added vermicelli to the oil before the rice and added a knob of butter to the oil before the rice.
