Straining:  Remove solids by straining through a fine sieve or cheesecloth. 7. Cooling and Storage:  Let broth cool slightly, then refrigerate in airtight containers overnight. Gelatinous texture indicates collagen extraction. 8. Shelf Life:  Refrigerate for 4–5 days. Freeze in portions for 2–3 months. Reheat to at least 74°C before serving.
