Isn’t this the most beautiful cake you’ve ever seen?!😍 make it & thank me later😮‍💨 RECIPE: CAKE (use 2 boxes of cake mix TOTAL, you’ll be making 2 cakes, the recipe below is for 1 cake)- 1 box @Betty Crocker white or vanilla cake mix (either works) 3 eggs 1 tbsp vanilla extract or bean paste 1 cup milk of choice 1 tbsp lemon juice (freshly squeezed) & zest of 1 lemon 1/2 cup (1 stick) melted unsalted @Kerrygold USA USA butter 1 cup washed & flour coated blueberries Mix until smooth and then spray your baking pan (I used @Wilton Cakes 8x3in pans) & add batter. Bake for 35-40 minutes on 350 degrees or until a toothpick comes out clean. Allow to cool on the counter for 30 minutes before removing from pan & placing your 2 cakes in the fridge. BLUEBERRY COMPOTE: 1 cup washed blueberries 4 tbsp water 2 tbsp white sugar 1 tbsp lemon juice Cornstarch slurry to thicken the sauce Mix on medium heat until it begins to thicken and then place in a bowl and set in the fridge. CHEESECAKE: 3 SOFTENED 8oz blocks @Philly Cream Cheese cream cheese 1/2 cup white sugar 1 tbsp lemon juice & zest of 1 lemon 1 tbsp vanilla extract or bean paste 1/3 cup heavy cream 1/3 cup sour cream 5 eggs total (added 3 first, then the remaining 2) Blend until smooth and all lumps are gone and then add half of your batter to a sprayed pan. Add half of your blueberry compote in dollops and then use a knife to swirl. Add your remaining cheesecake batter on top and then the remaining blueberry compote and swirl again. Bake for 1 hour on 350 degrees. Allow to cool on the counter for about 30 minutes, remove from the pan & then place into the freezer to set for 3-4 hours. VANILLA BUTTERCREAM- 2 200g blocks softened unsalted butter 1 tsp vanilla extract or bean paste 4 cups powdered sugar Blend until smooth and stiff peaks form then set aside. Cut the tops off of both of your cakes to level them & then to a cake board, add a little frosting to the bottom and then add your first cake on top, layer more frosting in between and then add your cheesecake to the middle. Add another layer of frosting and then top with your 2nd cake. Frost your entire cake and then add swirls to the top along with fresh blueberries to the middle.
