Roast at 400°F for 25-30 min, then 425°F for 5-10 min until deep golden and crisp 6. Salt immediately out of the oven 7. Whisk Kewpie mayo, ponzu, Dijon, lemon juice, chives, parsley, shallot, half the green onions, and red pepper flakes 8.
