Steak w/ chimichurri sauce + baked potato w/ caramelized onion Boursin Filling 🥩🥔 Steak (rib eye) * Pat dry, coat in olive oil, and coat each side generously in kosher salt and black pepper * Preheat grill to get it nice and hot (set to high heat, you want it around 450-500 degrees) * Please your steak directly on the grill, close cover, and let cook about 2 minutes. * After 2 minutes, rotate your steak 90 degrees while on same side (if you want grill marks). Roast in the oven at 425 for about 40-60 minutes (this will vary greatly depending on size of potato).  * When serving, add the caramelized onion Boursin filling (recipe below) Caramelized Onion Boursin filling: -cut one onion into slices. Cook low and slow on the stove in some olive oil and butter over low heat (add a little salt too) for about 30 minutes so they get nice and caramelized.  -Once nice and caramelized, add a little more butter and a few cloves of minced garlic directly into the butter. Stir for about a minute.  -add a splash of balsamic vinegar, a big spoonful of Boursin cheese, and a little chicken or beef broth to add some liquid. Stir until well combined and serve immediately in the potato.
