Preheat the oven to 200°C/180°C fan/Gas Mark 6. Cook the macaroni until just al dente, then drain. 2. Meanwhile, fry the chorizo for 4–5 minutes until crispy. 3. In a separate pan, melt the butter, whisk in the flour and cook for 1 minute. Gradually whisk in the milk until smooth and thickened. 4. Stir in the Dijon mustard and season with salt and black pepper. Add the cheddar, 150g mozzarella (saving some for the topping) and the Mexicana cheese. Mix well until melted and the sauce is thick and glossy. 5. Fold the cooked pasta and chorizo into the cheese sauce, mixing until everything is coated. 6.
