**Pumpkin French Toast with Whipped Pumpkin Butter** **Ingredients** **French Toast** * 4 eggs * ⅔ cup milk * ½ cup pumpkin purée * 1½ tsp vanilla extract * 1 tsp cinnamon * 1 tsp pumpkin pie spice * 12 slices Texas toast, French bread, challah, or croissant halves **Whipped Pumpkin Butter** * ½ cup butter, softened * ⅓ cup pumpkin purée * 3 tbsp maple syrup or honey * 1 tsp vanilla extract * ½ tsp cinnamon * ½ tsp pumpkin pie spice **Directions** Whisk together eggs, milk, pumpkin purée, vanilla, cinnamon, and pumpkin pie spice. Dip each slice of bread into the pumpkin mixture, coating both sides. Cook on a buttered skillet or griddle over medium heat until golden brown on both sides and cooked through. For the whipped pumpkin butter, beat softened butter until fluffy. Add pumpkin purée, maple syrup, vanilla, cinnamon, and pumpkin pie spice. Beat until smooth and creamy. Serve warm French toast topped with a generous scoop of whipped pumpkin butter.
