My viral White Chicken Chili 😮‍💨🥣🤍 Full recipe below 🫶🏼 - 2.5 lbs boneless skinless chicken thighs  - 1/2 a yellow onion, diced  - 1/2 red pepper, diced - 1/2 green pepper, diced  - 1 tbsp minced garlic - 14.5 oz diced tomatoes  - 14.75 oz fire roasted corn  - 7 oz diced green chile peppers  - 32 oz chicken broth  - 1 tbsp better than bouillon - 15.5 oz black beans, rinsed  - 15.5 oz pinto beans, rinsed  - 8 oz whipped cream cheese, room temp - 2 cups heavy cream  - kinders cuban blend (for chicken)  - adobo (for chicken)  - paprika (for chicken)  Seasoning Blend - 1.5 tsp garlic powder - 1.5 tsp onion powder  - 1 tsp paprika  - 2 tsp chili powder  - 1 tsp cumin  - 1 tsp oregano  - 1 packet sazon  - 1 tsp salt - 1 tsp black pepper - 1 tsp sazonador total  - 2.5 tsp white sugar  Cornstarch Slurry - 1 tbsp cornstarch  - 2 tbsp COLD water - season cleaned & trimmed chicken with avocado oil, adobo, kinders & paprika; mix until evenly coated - In a pot over medium/high heat, add a drizzle of olive oil then sear chicken on each side for 2-4 mins or until golden brown  - Remove chicken from pot, lower heat to medium then add in onions & peppers  - scrape fond (flavor bits) from bottom of pan while onions & peppers saute; add a splash of broth to help it come up easier - Add garlic then stir until fragrant - add about half of your broth  - add in cream cheese & use spoon to break it down & stir; continue stirring until little to no lumps are left (about 10 mins) - stir in diced tomatoes, chilis & roasted corn - Stir in seasoning blend, the rest of your chicken broth, better than bouillon, your beans & heavy cream  - Bring to a simmer then add back in your chicken - place heat on low, cover & let simmer for 1.5 hrs  - after 1 hour, remove lid & let simmer without it for last 30 mins - Remove chicken from pot & shred then return to chicken back to pot & stir  - slowly stir in cornstarch slurry then continue stirring until chili thickens - Serve with shredded cheese, sour cream, jalapeños, cornbread, etc. #chili #whitechickenchili #fallfood #dinnerrecipe
