Line a loaf pan with parchment paper and gently grease it with oil. Pour the batter, then bake the coconut banana bread at 350°F/ 175°C for 50-55 minutes, until a toothpick comes out clean. While the cake is baking, use a stand mixer to beat the butter and cream cheese until they are light and fluffy. While continuing to mix, add the vanilla, salt, and then slowly start adding in the sugar. Once you've added all the sugar, add the coconut shreds. Place in the fridge until it's time to frost. When the cake has baked, allow it *fully* cool off, then add the coconut frosting on top and dig in!🥰  #baking #desserts
