It promotes intestinal health, gut barrier integrity, bowl motility, and abdominal comfort.‡​   Gut health is very important to me, and I love finding ways to incorporate gut health supporting products in my recipes!​   Ingredients:​   • 2 cups salad greens​   • 1 cup roasted sweet potato cubes​   • 1/2 cup chopped red cabbage ​   • 1/2 cup cucumber slices ​   • 1/2 an avocado ​   • 1/4 cup pumpkin seeds​   • 1/4 cup radish slices (I used the purple variety)​   For the Super Greens Dressing:​   • 2/3 cup parsley ​   • 1/3 cup chopped spinach​   • 1/4 cup fresh basil leaves​   • 2/3 cup dairy free plain yogurt ​   • 1 tbsp @pureencapsulations SunButyrate ​   • Juice of half a lemon​   • 1/4 cup filtered water ​   • 2 cloves of garlic​   • 1/4 tsp Himalayan salt ​   ​   Directions: ​   1) First, peel and cut a medium sweet potato into small cubes and coat with a little avocado oil and seasoning if desired. Place on a parchment paper lined baking sheet and roast for about 30 minutes.​   2) In a food processor or small blender, add the parsley, spinach, basil, yogurt, SunButyrate, lemon juice, garlic, water, and salt. Blend until creamy consistency.​   3) In a large bowl, add the greens, cabbage, cucumber slices, some roasted sweet potatoes, pumpkin seeds, avocado, and radish slices.​   4) Drizzle some of the Super Greens Dressing over top and enjoy!​   ​ ‡These statements have not been evaluated by the Food & Drug Administration.
