Place a portion of the tofu mixture near the bottom-center of the softened rice paper. Roll tightly to form a neat cylinder. Repeat with the remaining filling and rice paper wrappers. Using kitchen scissors, carefully cut each roll into bite-sized pieces. 4. Arrange the pieces in a single layer in the air fryer basket and lightly spray with oil. 5.
