Because at first, he is genuinely interested in her but she keeps playing hard to get. Slowly, he may not realize it but his brain is beginning to adapt to the domamine he gets from the excitement of chasing after her. Thus, when she finally agrees, his brain no longer gets that signal that there's a goal worth chasing for. The end is a loss of interest. Of course the exception is if his interest remains strong enough to keep him reminded of why he initially started talking to her, but for many guys, they just get lost in the chase and forget that the end goal was much more to begin with.
