Toss until well coated and set aside. Cook the sweet potato noodles in a pot of boiling water for about 3 - 5 minutes then strain and run under cold water until cool. Transfer to a mixing bowl and toss through sesame oil. Heat 2 tbsp oil in a pan over high heat and stir fry the beef until just cooked through. Once  cooked, remove and place into the same bowl as the noodles. In the same pan over high heat, heat some oil and stir fry onion, carrot and the white part of the spring onion with some salt and pepper. Add the mushroom and minced garlic and stir-fry for a further 2 minutes. Add the spinach and toss until wilted, then add the noodles and cooked beef back in along with all the ingredients for the stir fry sauce.
