BROWN BUTTER SNICKERDOODLE SUNDAES  Umm everything I’ve ever dreamed of 🍦✨ Recipe below OR go to my website through the link in my bio Also sent out on my Substack this morning, you can join through the link in my bio 🤎 #Recipe Details: Peaches: - 1 tbsp (14g) salted butter @KerrygoldUSA  - 1 cup (200g) chopped peaches - 2 tbsp (40g) brown sugar  - 1 tbsp (24g) maple syrup - 1/2 tsp (2g) cinnamon Easy Salted Caramel: - 2 tbsp (28g) coconut oil, melted - 2 tbsp (34g) almond butter @Jem  - 5 tbsp (120g) maple syrup - Pinch of salt Ice Cream Base: - 14oz sweetened condensed milk @eaglebrandmilk  - 2 tsp (8g) vanilla extract or paste  - 8oz cream cheese, at room temperature @Philly Cream Cheese  - 2 cups heavy cream, cold Brown Butter Snickerdoodles: - 2 2/3 cups (340g) all-purpose flour - 1 tbsp (10g) cornstarch  - 1 1/2 tsp (5g) cream of tartar - 1/2 tsp (3g) baking soda - 1/4 tsp (1g) baking powder - 1/2 tsp (3g) salt - 18 tbsp (252g) salted butter, browned and cooled - 1 cup (220g) granulated sugar - 1/2 cup (125g) brown sugar - 2 eggs, at room temperature - 2 tsp (8g) vanilla extract  - 1/4 cup (55g) granulated sugar + 1 tbsp (8g) cinnamon, for coating  Instructions: Start by preparing the peaches for the ice cream. In a medium pan, melt the butter over medium heat. Add the peaches, brown sugar, maple syrup, and cinnamon, and mix to combine. Cook for 5-6 minutes, until the peaches release their juice and slightly simmer.  Remove from the heat and pour into a medium bowl, then use a fork to just slightly smash them down, making sure to keep some chunks. Place in the fridge to cool. Make the salted caramel by mixing all of the ingredients together in a small bowl. You can adjust the runniness to your liking by adding more maple syrup, if desired. Prepare the ice cream.  In a large bowl whisk together the sweetened condensed milk and vanilla until well combined. In the bowl of a stand mixer or in a large bowl using a handheld electric mixer, beat the cream cheese to smooth. Add the heavy cream and beat for 3-4 minutes, until stiff peaks form. Add the whipped cream mixture to the sweetened condensed milk mixture, and gently fold until fully incorporated (it’s okay if it’s a little lumpy). Pour half of the ice cream mixture into a 9x5” loaf pan that’s lined with parchment paper. Dollop half of the peach mixture all over, followed by a drizzle of half of the salted caramel. Repeat this process one more time, using the rest of the ice cream mixture, peaches, and salted caramel. Finish with a sprinkle of flaky sea salt, then gently use a knife or toothpick to swirl. Cover the pan with a lid or foil, and place into the freezer for at least 6 hours or overnight. Before serving, make the snickerdoodles. Preheat the oven to 350F. Line 2 baking sheets with parchment paper. In a medium bowl, sift together the flour, cornstarch, cream of tartar, baking soda, baking powder, and salt. Set aside. In a separate large bowl, add the cooled brown butter and both sugars. Whisk to combine. Whisk in the eggs and vanilla. Then, fold in the dry ingredients until just combined. In a small bowl, mix together the sugar and cinnamon for the coating.  Use a large cookie scoop (3 tbsp) and scoop large cookie dough balls. Roll the balls in the cinnamon sugar mixture, and place on the baking sheets, spacing the cookies 2” apart.  Bake at 350F for 12-14 minutes, until the edges are slightly golden. Remove and allow to cool for 5 minutes before transferring to a wire rack. Serve the cookies warm with the salted caramel peach ice cream.
