Wash and scrub the first apple. Peel if desired, then cut into chunks. 	2.	Add the apple, sugar, eggs and oil to a blender. Blend until completely smooth. 	3.	Add the flour and pulse only twice. Do not over-blend. Overmixing can make the cake dense instead of light and tender. 	4.	If using the additional apple, cut it into small chunks with the peel on and gently fold it into the finished batter. 	5.	Grease or spray your baking pan and pour in the batter. 	6.	Bake at 350°F (175°C) for about 45 minutes, depending on your pan. A toothpick inserted into the center should come out clean. 	7.	Allow to cool. Warm the Biscoff cookie butter until pourable, drizzle it over the cake and finish with crushed pecans.
