@craftabrew: Hard seltzer is basically fermented sugar water, and the flavor is entirely up to you. Personally, we think Kool-Aid powder just might be the easiest, cheapest way to accomplish that! Kool-Aid is loaded with citric acid, which does double duty. It promotes healthier fermentation (yeast thrive in a slightly acidic environment) AND it gives the finished seltzer that bright, refreshing character. We used a Sharkleberry Finn Kool Aid packet (a personal favorite). What flavor would you choose? #hardseltzer #homebrewing #fermentation

mead is even easier. water, honey, yeast. ferment, rack, bottle. you can get fancy by adding fruit during the rack stage, but then it's called melomel. no shitty erythritol

So I've made mead twice and both times my fermentation stalled. I primarily make beer so I just used beer yeast nutrients. Maybe I didn't use enough? I'm not sure. I forgot which wine yeast I used but it's a common one. I fermented at room temp. My last batch I got "un-stalled" after throwing some champagne yeast in and even then it took ages. I think full fermentation from 1.095 to 1.003 was like 2 months. Surely I'm doing something wrong.
