@coriinnaaa1: Sloppy Joes were in our regular rotation growing up and something about them tastes like being a kid again… same saucy, nostalgic filing, just served with sweet potato instead of squished between two pieces of bread 😅 - preheat oven to 400 - chop a few sweet potatoes (we had Japanese) into bite-size pieces (also left the skin on but feel free to peel) - in a large bowl, season sweet potatoes with some EVOO, salt, pepper, parsley and grated parm (I eyeballed amounts but made sure all pieces had a generous coating) - transfer potatoes to a baking sheet lined with parchment paper, ensuring they are spread out in a thin layer - bake for 20 to 25 minutes or until the potatoes are fork tender. Flip half way through baking - while potatoes are baking, heat a large skillet over medium - brown 1.5 lbs of ground beef until no longer pink - add 1 cup ketchup, 1/2 tsp each of salt, pepper and paprika, 2 tbsp sugar, 1/4 water, 1/2 tsp vinegar and about 2 tbsp of yellow mustard (I eyeballed this one). Stir to combine and simmer on low until heated throughout - build bowl with sweet potato & sloppy Joe mixture - top with some pickled red onion, pickle chips and some green onion (feel free to change this up but we like savory) - serve immediately Bone Apple Teeth 😋 #DinnerIdeas #sloppyjoe #easydinnerideas #sloppyjoes #comfortfood childhood meals nostalgic meals nostalgia food
