@hannahroeoutdoors7: Ingredients: for 1 1 large skate wing (cut into 2) 7-8 asparagus tips 10-20 thin green beans 5-6 small cubes guanciale (smoked bacon also fine) 3 tbsp capers 4 tbsp butter Flour for coating Olive oil for frying Salt for dusting Recipe: - cut the wings to debone according to video - lightly salt and flour them and pat with some oil - get guanciale heating gently in a pan to render fat - get a frying pan ripping hot for fish - wash and top and tail veg then Blanche them (put them in boiling water for 2-3 min in a pan) - put in fish, fry 4-5 min one side - flip and fry 4-5 min second side - put the veg into the guanciale for final 4-5 min of cooking - finish by putting butter into frying fish for a final minute with the capers then serve
