Observation in quantum physics is not referring to something that you are looking at, but something you detect. To detect a particle , you have to interact with it, which causes the particle to entangle, at least until it interacts with another particle and entangles with that. This is going on all the time, wherever there is energy. Nobody has to look at it for this to occur.
