I'm on the most delicious elderberry fruit leather trip, and tonight I'm adding to my list of flavors I've tried, with the addition of strawberry. It's so delicious every time, I'm going to keep trying whatever fruit in my fridge needs to be used. Now I'm not claiming fruit leather is medicine. If we got sick, I'd certainly take elderberry syrup or tincture over fruit leather. This study shows us that at low temperatures anthocyanins can survive processing of fruit leather, so think of fruit leather as a functional food. A food that not only provides nutrition but serves a purpose beyond that. I can't forge to add, it's delicious and picky eater approved! Elderberry Fruit Leather: Ingredients 2 cups of chopped or diced fruit of choice (good options are apples, pears, plums, peaches) 1/2 cup elderberry syrup 1 tsp of lemon juice (optional) Directions 1. Blend everything until completely smooth. 2. Spread evenly onto a dehydrator tray lined with a silicone sheet, about ⅛ inch thick. Do not make it too thick or it won't dry properly. You can also use a lined baking tray that has raised edges. 3. Dehydrate at around 100°F until the leather is dry, flexible, and no longer sticky. Start checking around 6–8 hours, but it may take longer depending on your dehydrator and the moisture in your fruit. 4. Let cool, peel off, and cut into strips. Store in a container at room temperature for up to 2 weeks or longer, if you store in the fridge they will last even longer. You can also make fruit leather with an oven if you do not have a dehydrator! Just set the oven to the lowest temperature and be aware it will cook faster, so make sure you check periodically to ensure you don't overcook it. If you need elderberries or elderberry syrup kits you know who to get it from!!!! stay healthy drink your elderberry!😉 🥰 #elderberry #elderberrysyrup #fruitleather #healthysnacks #functionalfood
