Simple Pork & Cilantro Dumplings (Makes ~50) Ingredients * 1 1/2 lb ground pork * 3–4 green onions, finely chopped * 1 cup cilantro, finely chopped * 2–3 cloves garlic, minced * 1 tbsp fresh ginger, grated * 3 tbsp soy sauce * 2 tbsp sesame oil * 1 tbsp rice wine vinegar  * 1 tsp sugar * ½ tsp salt * ¼ tsp white pepper * 2 pack dumpling wrappers (~50) * Water (for sealing wrappers) Recipe: 1. Mix filling: In a bowl combine: ground pork, chopped green onions, chopped cilantro, garlic & ginger, soy sauce, sesame oil, rice wine vinegar, sugar, salt & pepper. Stir until all ingredients are evenly combined. 2. Assemble: Place 1 wrapper flat in your hand, add ~1 tsp of the pork filling into centre.  Dip your finger in water and moisten the edge of the wrapper and fold in half and press edges to seal (pleated or flat). 3. Cook: Pan-fry (for crispy bottoms) or Boil:         - Pan-fry: heat oil onto pan over medium heat, arrange dumplings flat side down, avoid touching.
