Busy days call for simple, comforting meals 🥘 & @Checkers South Africa & Jamie Oliver's Chilli Non Carne Soup is packed with flavour and makes eating better feel simple, even when life gets busy 👩‍🍳 Get everything you need in-store or shop online @Checkers_Sixty60  INGREDIENTS: Onions Garlic Fresh coriander Olive oil Butternut Fresh chillies Smoked paprika Rice Beans 2 tins chopped tomatoes Water Sea salt & black pepper Tortillas Grated cheese, to serve (optional) Plain yoghurt, to serve (optional) METHOD: 1. Preheat the oven to 180°C.  2. Peel and finely slice the onions and garlic, then finely chop the coriander stalks, reserving the leaves for later. 3. Heat a large saucepan over medium heat, add 1 tsp olive oil, then cook the onions, garlic and coriander stalks for 10 minutes, until softened. 4. Peel and chop the butternut into 1.5 cm chunks.  5. Deseed and finely slice the chillies, then add both to the pan with the smoked paprika. Cook for a further 10 minutes. 6. Stir in the rice, beans and their juice, chopped tomatoes and 2 tins’ worth of water.  7. Break up the tomatoes with a spoon, season with salt and pepper, then simmer for 20 minutes, or until the rice and butternut are cooked through. 8. Meanwhile, cut or tear the tortillas into triangles.  9. Arrange on a baking tray and bake for 7 minutes, until golden and crisp. 10. Spoon the soup into bowls, scatter over the remaining coriander leaves and serve with the crispy tortilla chips for dunking.  11. Finish with grated cheese and a dollop of plain yoghurt, if you like 🌿🥣
