Raspberry & White Chocolate Scones Recipe 👇🏼 Ingredients: 3½ cups self-raising flour 1 cup mineral water (or Sprite/lemonade) 1 cup thickened cream/heavy cream 1 cup white chocolate chips 1 cup frozen raspberries Milk, for brushing Method: Chuck your 3½ cups of self-raising flour into a bowl and make a well in the middle. Pop in 1 cup of mineral water (you can use Sprite or lemonade too) then add 1 cup of thickened cream. Give it a mix until it forms a nice loose dough. Whack in 1 cup of white chocolate chips and mix those through. Then grab your 1 cup of frozen raspberries and crush them up a little bit so they’re smaller, then gently mix them through. Now flour up your bench and tip your dough out. Bring the dough together, making sure you grab up any loose bits that are falling out :)  Flour the top of the dough then Press the dough out with your hands, then fold it onto itself. This is what gives your scones that gorgeous line through the middle when they rise :)  Flour the top again and cut out your scones using a round cutter or glass.  And whatever you do, PLEASE don’t twist the glass!  Just press straight down and lift it straight back up. If you twist, your scones can tip over as they rise !  Pop them onto a lined baking tray touching each other. Brush just the tops with a little bit of milk. Try not to let the milk run down the sides. Chuck them into a preheated oven at 180°C for 25–30 minutes, or until they’re lightly golden on top and around the edges.
