Juicy chicken, soft lemony potatoes soaking up ALL those juices, then I served it over a garlic yoghurt aioli because apparently I can’t leave anything alone 😂🤌🏽 That creamy, garlicky layer underneath with all those lemony chicken juices… UNREAL. Save this one because it’s an absolute family banger! ❤️ RECIPE — serves 4–6 🍗 Chicken & Potatoes • 6 chicken legs • 6 potatoes, halved • 4 garlic cloves • 3 bay leaves • 1 tbsp tomato purée • 1 Maggi chicken stock cube • 1 tbsp powdered chicken stock • 1 tsp bay leaf powder • 1 tsp cinnamon • 1 tbsp oregano • 1 tbsp lemon & herb Mediterranean seasoning • 1 tbsp garlic granules • Zest of 1 lemon • Juice of 1½ lemons • 4 tbsp olive oil • Salt & pepper • 240ml hot water Add everything to a large roasting tray and give it a really good mix, making sure the chicken and potatoes are coated in all that seasoning. Roast at 180°C for around 1 hour 20 minutes, turning/basting the potatoes in those gorgeous juices during cooking, until the chicken is golden and completely cooked through and the potatoes are soft and crispy around the edges. 🥣 GARLIC YOGHURT AIOLI Mix thick Greek yoghurt with garlic, a squeeze of lemon, a little olive oil and salt to taste.
