Very important to mention that your fat has to have a high smoke point, if you do that with olive oil or butter it’ll burn, a better option is avocado oil

My problem is with every frying pan I've ever owned, the oil pools around the edges. So when they say "a splash of oil" or whatever, I feel like I need to use more to coat the pan, or else I'll just end up putting whatever I'm cooking on the dry part of the pan.

The one thing these videos always forget to tell you is that cold/out of the fridge eggs will stick unless you use copious amounts of oil and let it heat up to almost smoking, and agitate them immediately. Close to room temp eggs for fried eggs in SS is especially key

the water test also works if the pan is way too hot. make sure to check out until it starts to happen, if you just keep heating it, it will still bead up but you'll burn things quickly.

for eggs I've found that pre warming then drop some butter it's hot so it's going to melt quick and almost turn brown but immediately drop the eggs and let them cook. once the tops have been 60% cooked drop the heat to low and as the pan cools off the eggs are cooked no longer stuck and can be flipped. these are fried eggs but also works with over easy.

Maybe I’m old - but I grew up with only using stainless steel pans because teflon were too expensive for my mom. Stainless steel really isn’t a great mystery.
