![INGREDIENTS [makes 6-8 ricecakes] 250g cooked & cooled rice [should be arborio or sushi rice] 100g vegan feta 10-12 basil leaves 5 sun-dried tomatoes 2 tablespoons pine nuts 1 tablespoon tomato puree 1 tablespoon nigella seeds 1 garlic clove 1 tablespoon ground paprika Olive oil to fry Salt & pepper ——— 3 tablespoons vegan greek style yoghurt 1 tablespoon vegan basil pesto METHOD 1] Break rice grains apart & add paprika, nigella, minced garlic, puree, salt, pepper & pine nuts.
