@isaiahcooksmeat: Pig’s Head 🐷🔥 Disclaimer - no piggies were harmed in the making of this reel 🐷🔥 He decided before he died to donate his body to entertainment 🙏 Full recipe below ⬇️ - 1 pig’s head, split in half (@paddocktotable 🐷) - Grey or coarse salt - Juice of 1 orange - Zest of 1 orange - 2 star anise, crushed - 1 tbsp coriander seeds, crushed - 1 tbsp fennel seeds, crushed - Olive oil 1. Wash the pig’s head thoroughly under cold running water for around 1 hour. 2. Combine the salt, orange juice, orange zest, star anise, coriander and fennel seeds. Rub generously over the pig’s head and refrigerate for 24 hours. 3. Rinse the cure from the head and pat completely dry. Place uncovered in the fridge overnight to thoroughly dry the skin. 4. Lightly coat the skin with olive oil. Into the smoker or oven uncovered at 125°C until the meat has reached 90-95c internal 5. Transfer into the oven at 250°C and roast until the skin is deeply golden, blistered and crispy. Cover any areas that are getting too dark with foil. 6. Remove the jawline, cheek and forehead meat as well as the crackle 🔥🔥 7. Enjoy Probed with @meater.australia probe - honestly a life saver 🙏
