Aroma is more important than the clock. Once the fragrance becomes noticeably stronger, remove the spice on fire. I don’t roast everything together because different spices release their aroma at different speeds. Low heat and separate batches. Once the fragrance becomes noticeably stronger, take it off the heat. Over-roasting can turn a beautiful curry blend bitter very quickly.
