Ingredients + Recipe: 🌮🥫🧀 I knew I had a pound of ground beef, corn tortillas, and not a lot of desire to be cooking, so this was the perfect meal! 🤪🫶🏽 Meat Filling: - 1 lb ground beef - 1/2 white onion, diced - 1 garlic clove, minced - 2 tbsp tomato paste - 1 tbsp garlic powder - 1 tbsp onion powder - 1/2 tsp pepper - 1 tbsp paprika - Salt (to taste) - 1 sason seasoning packet Homemade Enchilada Sauce: - 4 tbsp olive oil - 4 tbsp flour - 1 tbsp chili powder - 1/2 tsp onion powder - 1 tbsp garlic powder - 1 tsp cumin - 1/2 tbsp paprika - Black pepper & salt to taste - Option: Alternatively, use red canned sauce Additional: - Corn tortillas (lightly cooked in oil to prevent breaking) - Shredded cheese Instructions: 📝 1. Preheat & Prepare Pan: Preheat your oven to 375°F (190°C). Lightly oil a baking dish. Place a thin layer of enchilada sauce at the bottom. 2. Cook Meat Filling: a. In a skillet, brown ground beef over medium heat. b. Add diced onion and minced garlic; cook until softened. c. Stir in tomato paste, garlic powder, onion powder, pepper, paprika, salt (as needed), and the seasoning packet. Mix thoroughly until well combined. Set aside. 3. Make Enchilada Sauce (if making homemade): a. In the same pan, heat olive oil over medium heat. b. Stir in flour to form a roux; cook for a minute to eliminate raw flour taste. c. Add chili powder, onion powder, garlic powder, cumin, paprika, salt, and black pepper. d. Gradually whisk in water or broth (if needed) to form a smooth sauce consistency. 4. Prepare Tortillas: Lightly fry corn tortillas in oil for a few seconds on each side. This helps prevent tearing while assembling. 5. Assemble Enchiladas: a. Dip each tortilla in enchilada sauce briefly. b. Spoon a layer of meat filling onto the tortilla and roll it up. c. Place rolled enchiladas seam-side down in the baking dish. 6. Layer & Top: a. Pour the remaining sauce over the assembled enchiladas. b. Top with extra meat (if desired) and sprinkle shredded cheese over everything. 7. Bake & Serve: Bake in the preheated oven until the cheese is melted and bubbly (about 15-20 minutes). Serve hot and enjoy! #EasyRecipes #whatsonthemenu #easyfamilyrecipes #FoodTok #cookingtiktok
