@cocinaconilse: 💚SOPA DE TORTILLA 🌶️ Una sopa llena de sabor, preparada con chiles secos, tomates y caldo de pollo, acompañada de pollo desmenuzado y crujientes tiras de tortilla. El queso panela, el aguacate, la crema mexicana y el cilantro fresco completan este reconfortante plato. Ingredientes Para la sopa * 4 chiles guajillo * 1 chile ancho * 4 chiles de árbol * ½ cebolla * 3 tomates Roma * 3 dientes de ajo * 2 tazas de agua, para licuar * 3 tazas de caldo de pollo * 1 cucharadita de sal o al gusto * ½ cucharadita de pimienta * ½ cucharadita de comino * 1 cucharadita de consomé de pollo * 1 cucharadita de orégano * 1 taza de aceite Para el pollo * 1 pechuga de pollo * 4 tazas de agua, para cocinarla Para acompañar * 6 tortillas de maíz, cortadas en tiras * 1 aguacate, cortado en cubos o rebanadas * 4 oz de queso panela, cortado en cubitos * ½ taza de crema mexicana * Cilantro fresco Preparación 1. Cocina el pollo. Coloca la pechuga de pollo en una olla con 4 tazas de agua y cocina hasta que esté completamente cocida. Retírala y, cuando haya enfriado lo suficiente para manipularla, desmenúzala. Reserva. 2. Prepara las tortillas. Corta las 6 tortillas de maíz en tiras. Calienta el aceite y fríe las tiras hasta que estén doradas y crujientes. Retíralas y déjalas escurrir. 3. Prepara la base de la sopa. En una sartén, saltea los tomates Roma junto con la cebolla y los dientes de ajo. 4. Incorpora los chiles. Agrega al salteado los chiles guajillo, chile ancho y chiles de árbol. Saltéalos brevemente junto con los demás ingredientes para que desarrollen su sabor. 5. Licúa. Transfiere los ingredientes salteados a la licuadora. Agrega 2 tazas de agua y licúa hasta obtener una salsa homogénea. 6. Fríe la salsa. Vierte la salsa licuada nuevamente en una olla con un poco de aceite caliente y sofríela para intensificar sus sabores. 7. Prepara la sopa. Incorpora las 3 tazas de caldo de pollo y sazona con sal, pimienta, comino, consomé de pollo y orégano. Cocina hasta que los sabores se integren y la sopa alcance la consistencia deseada. 8. Sirve. Coloca primero la sopa caliente en el plato. Agrega pollo desmenuzado y las tiras de tortilla fritas. Termina con queso panela en cubitos, aguacate, crema mexicana y cilantro fresco.
