Hailey’s Homemade Chili Oil For the Oil: * 3 Star Anise * 1 tbsp Sichuan Peppercorns * 2 Bay Leaves * 3 Slices of Ginger * 10g Cilantro  * 2 Bunches of Scallions (sliced) * 1.5 cups Peanut Oil (or any neutral oil) Chili Mix: * 1/4 cup Chili Flakes (25g) * 1/4 cup Chili Powder (30g) * 15g Sesame Seeds * 1/2 tsp Salt * 1 tsp Sugar * 1 tsp Chicken Powder Instructions: 1. Prepare the Chili Mix: In a bowl, mix chili flakes, chili powder, sesame seeds, salt, sugar, and chicken powder. Set aside. 2. Infuse the Oil: In a saucepan, combine star anise, Sichuan peppercorns, bay leaves, ginger, cilantro, scallions, and peanut oil. Heat on medium-low for 15 minutes, keeping the oil between 310–340°F. Stir occasionally and avoid overheating. 3. Strain the Oil: Strain the oil to remove the spices using a fine mesh strainer. 4. Pour Slowly: Slowly pour the hot oil over the chili mix in a heatproof bowl. It’ll sizzle — that’s a good sign! 5. Cool & Store: Let the chili oil cool to room temperature, then transfer to a jar or bottle. Store in the fridge. It lasts for up to 1 month.
