You missed out on one thing - Drømmekage!! It is a soft sponge cake with a brown sugar and coconut flakes topping - for the best ones the topping should be almost half and half… most who love brunsviger also love drømmekage ;)

As a Dane, I would say the princess cake, isn't actually a princess cake it does look like a goose breast cake. Mainly because the marcipan is white not green, it has vanilla creme and the shape is not like a piece of princess cake (it's round), while a goose breast cake is elongated. 🤷🏻♀️Just an FYI to basically another Dane 😆❤️

I love all the danish pastries and fun flavors in Copenhagen! I would not go to Copenhagen for princess cake. I would cross the bridge to Malmö (if you don’t go to Gothenburg or Stockholm). Since its not a danish. For cardemom/cinnamom bun its only the swedish baker at Juno that is exceptional. Otherwise I would go to Sweden/Norway for this type of pastries. :) There are some differences between the countries.

Traditionally romkugler is day old pastries that have been mushed together and rum licquer/flavoring added so taste can vary a bit if they still use this old method of making it. Sold to reduce waste but it’s also popular on its own. Maybe why you didn’t see them that many places if they don’t have a lot of leftovers from the day before.
