Ok so you don't add water after the sugar has caramelised, you add it the minute you add your sugar, so it dissolves together, stir at the beginning so it mix properly but the minute it starts bubbling don't stir or touch it, you can use the pot to stir it tho. so the moment is a light amber colour or a darker colour you add your butter then double cream
