if you sit the banneton basket on top of the oven while you're baking or preheating it'll help it dry out so it doesn't mold!

what about black coco powder bloomed in coffee instead of water? like replace your water for coco flavored coffee...that would be dark and I think taste SOOO yummy

I dunno if this helps but some other creators put their banner on upside down on the stove after the loaf bakes so the residual heat dries it out. I hope this helps or you find something else that does

for the chai flavor, the king arthur bread company sells chai spice powder that is meant for baking if that peaks your interest lol:)
