@life_as_mrs.carrick: Recipe below ⬇️ Pumpkin Cake 300g self raising flour 300g light brown soft sugar 3 tsp mixed spice 2 tsp bicarbonate of soda 175g sultanas/raisins 1/2 tsp salt 4 beaten eggs 200g melted butter Zest 1 orange 1tbsp orange juice 500g peeled weight pumpkin (butternut squash also works) For the frosting: 200g soft cheese 85g butter 100g icing sugar (Can also include zest and 1tsp juice of an orange) Method: Preheat oven to 160 fan. Grease and line a roasting tin or two 9x9s. Mix the flour, sugar, spice, bicarbonate, sultanas and salt in a bowl and set aside. Combine the melted butter and beaten eggs in a bowl by giving it a quick whisk. Add into the dry ingredients and combine. Add in the orange zest and juice and combine. Add in the pumpkin and combine. Pour the batter into your tin and bake for 30-35 minutes. For the frosting beat the butter until smooth. Add in the icing sugar and soft cheese as well as the zest and juice if using. Combine again. Place in fridge until the cake is cooled or else make when the cake is completely cooled. Frost and cut into slices. This will keep in the fridge in an air tight container for up to 3 days or can also be frozen unfrosted. Also, if you prefer, just pair with some custard! Enjoy! #pumpkin #pumpkinseason🎃 #BakeWithMe #pumpkins #pumpkinspiceseason
if you quarter them and put them in the oven for a bit until they are soft you can scoop it out and use puree .. might not work for this recipe but amazing and so much quicker too
