homemade crunchy granola 🤎 this might be my new favorite way to use sourdough discard - but you absolutely DO NOT need sourdough to make this! just leave the discard out and don’t replace it with anything. this recipe makes 2 full sheet pans. for 1 tray, simply cut everything in half. recipe: homemade crunchy granola 🤎 11 cups (1,000 g) sprouted rolled oats 1 cup (about 120 g) walnuts 1 cup (about 140 g) almonds 1 cup (about 140 g) cashews 1 cup (about 120 g) shelled pistachios 1 cup (about 110 g) pecans 1 cup (about 130 g) pumpkin seeds 1 1/2 cups (about 120 g) unsweetened coconut 3/4 cup (about 180-200 g) sourdough discard - optional 1 stick butter (1/2 cup / 113 g) 3/4 cup (about 165 g) avocado oil or any neutral oil 3/4 cup (about 255 g) honey 3/4 cup packed (about 150 g) brown sugar 2 tbsp vanilla preheat oven to 350°f. combine the oats, nuts, pumpkin seeds and coconut in a large bowl. gently heat the butter, oil, honey and brown sugar just until the butter melts and the brown sugar dissolves. don’t overheat it or you’ll start turning that sugar into caramel. remove from the heat and let it cool slightly. stir in the vanilla and sourdough discard, if using. pour over the oat mixture and toss really well until everything is coated. divide evenly between 2 parchment-lined sheet pans. bake 25 minutes. toss everything well and bake another 10 minutes. toss again, then use the back of a spoon or spatula to press the granola down firmly. bake for a final 6-10 minutes.. depending on how crunchy you like it. 35-45 minutes total. keep an eye on it and make sure you’re moving it around between bakes so the top and edges don’t burn. now for the BIG clusters - after that final bake, don’t touch it! let the granola cool completely while it’s still pressed together. once completely cool, break it apart into big crunchy chunks. store in an airtight container once completely cooled. and remember - no sourdough starter? no problem. leave the discard out completely. you don’t need to substitute anything, it’s still crunchy and yummy. #homemadegranola #sourdoughdiscard #granola #sourdoughdiscard #sourdoughdiscardrecipe
