El #shakshuka es un plato magrebí, ampliamente distribuido en el norte de África y Medio Oriente 🫶🏼🇵🇸 Consiste en un plato de huevos escalfados en tomate y especias, muy simple pero delicioso ♥️ Tradicionalmente es un plato de desayuno, pero yo encuentro que es perfecto para cualquier momento del día!🤤 . Es naturalmente bajo en carbohidratos (#lowcarb o #keto), con buen aporte de proteínas por los huevos y con un montón de nutrientes, antioxidantes, vitaminas y minerales de las verduras y especias🙌🏼 . Inspirado en uno de mis libros regalones, Falastin de Sami Tamimi 🫶🏼🍉 . 🍅Ingredientes: - 1 cebolla pequeña en pluma o cuadritos - 1/2 pimentón en tiritas o cuadritos - 1 diente de ajo - 1 tarro grande de tomates en cubitos (o de tomates pelados) - Opcional: 1 cda concentrado de tomate - Huevos (cantidad a gusto) - Condimentos: sal, pimienta, semillas de cilantro, comino. - Aceite de oliva con chilli: aceite de oliva y pimienta roja entera (o de cayena). - Toppings: queso feta y perejil picado (también puede ser cilantro o menta). . 🍅Preparación: 1. Sofreir en aceite de oliva la cebolla, pimentón y ajo, hasta que la cebolla esté transparente. 2. Agregamos los tomates y condimentos. Incorporamos bien y dejamos cocinar a fuego bajo, tapado, por unos 5-10 minutos, o hasta que todo esté cocido y full aromático. 3. Con una cuchara hacemos espacios en la mezcla para ir agregando los huevos. Volvemos a condimentar y tapamos, cocinando solo unos minutos hasta que la clara se ponga blanca. Recuerden que la idea es que queden como huevos pochados, con la yema líquida 🤤 4. Fuera del fuego agregamos el aceite picante y toppings.
